Michael Construction Meets Unique Needs of Large Bakery

The New French Bakery is a Twin Cities-based producer and distributor of artisan-style baked goods, both fresh and frozen, with clients throughout the United States.

The company’s Minneapolis facility, producing a menu of more than 700 items, is the hub of its operation. So when Peter Kelsey, owner and president of New French Bakery, needed to remodel the aging facility in 2006, he wanted to work with a contractor that knew about the food business, as well as construction.

He turned to Greg Michael and Michael Construction, with whom he had worked on a previous project.

“I knew Greg had a great handle on food-related construction,” says Kelsey. “He knew our remodel had to give us a facility that worked with our unique European technology and was easy to maintain and clean.”

The remodel of the Minneapolis facility essentially gutted and rebuilt the 50,000 sq. ft. building’s entire interior and added locker rooms, offices and a mezzanine. It was built on time, on budget and with the quality Kelsey expected.

Kelsey says one of the stand-out aspects of the project was the lack of a punch-list, or outstanding projects, as the building neared final construction. This left him with a sense of completion.
